If one were to rate BAD stuff on the road, the first category would be the CATASTROPHIC! These are events like your vehicle is on fire or twisted around another; engine, transmission, or brake failure; your camp site in flames, or all your accounts are hacked. The next category of BAD is GI issues. For obvious reasons, nomadics are at higher risk and hanging around bathrooms is just as necessary, but not just as easy.

This isn't just background risk this year — cyclosporiasis is actively surging across the United States, with cases reported across 32 states. A further 343 cases were linked to travel outside the US, and many severe enough to be hospitalized. This can incubate for 14 days and last even longer.

For people constantly on the move, the strategy stays simple even as the science gets more specific: when in doubt, cook it — and cook it thoroughly.  Don’t reinfect thinking you have handled it wisely. Definitely, do NOT gamble. Living on the road, we rely upon fresh produce, can have cooking limitations, and power can often be in flux. Lean on cooked vegetables, baked fruit desserts, grilled meals, and hot freshly prepared food. These combined with soap-and-water, hand hygiene, and a clean knife between raw and ready-to-eat items — goes a long way toward avoiding an illness that can derail life.

What is this thing ballooning across America?

Cyclospora (Cyclospora cayetanensis) is a microscopic parasite that causes cyclosporiasis, an intestinal illness affecting thousands of people worldwide each year. Unlike bacteria such as Salmonella or E. coli, Cyclospora cannot multiply in food. Instead, it reaches fruits and vegetables through contaminated irrigation water or poor sanitation during harvesting and handling. The parasite must mature in the environment for a week or more before it becomes infectious, which is why direct person-to-person spread is uncommon.

Fresh produce is the most common source of infection. Outbreaks have been linked to cilantro, basil, lettuce, spinach, raspberries, snow peas, and mixed salads — foods eaten raw often enough that the parasite survives long enough to infect consumers.

Symptoms usually begin 2 to 14 days after exposure and may continue for several weeks if untreated. Some of had symptoms for over a month. They include watery diarrhea, abdominal cramping, bloating, nausea, fatigue, loss of appetite, weight loss, and occasionally a low fever. Symptoms often improve and then return — a relapsing pattern that makes Cyclospora particularly disruptive for anyone on the road.

 


Heat destroys it — here's exactly how much heat

One of the most important facts about Cyclospora is that heat destroys it, but the margin isn't infinite — lab studies on oocyst viability give fairly precise numbers:

In practice, normal cooking clears these numbers with room to spare in both temperature and time. The only real risk is undercooking — a thick piece of food or a dense filling that never gets hot all the way through. Get a thermometer, don’t guess.

Fruit pie: very safe. A 350–425°F (175–220°C) oven, combined with a filling that simmers near boiling in its own juices, clears the threshold comfortably. Cooking has to be even and sustained!

Quiche: also safe, but with a narrower margin. It bakes at a gentler 325–375°F (163–190°C), and doneness is reached when the custard center hits roughly 160–175°F (71–79°C) — right at or just above the kill point. Bake until fully set, not just until the edges look done; a deep or dense quiche needs those extra few minutes for the center to catch up.

Frying: oil typically runs 325–375°F (163–190°C), well above the threshold. As long as the food is cooked through — not just browned on the surface — frying is reliable. Normally fried food is what to fear.

Where cooking doesn't help: anything added raw after the heat step — fresh herbs scattered on a finished dish, raw berries on top of a baked pie, a garnish added at the last second — skips the process entirely and carries the same risk as eating it raw.

Cooked vegetables, soups, stews, stir-fries, and casseroles are all low-risk once fully heated. Boiling water for at least one minute makes it safe from Cyclospora and most other pathogens.

By contrast, washing produce under tap water removes dirt but does not reliably eliminate Cyclospora. Vinegar rinses, baking soda washes, and most commercial produce washes can't be relied on either.

The 2026 outbreak: where things stand right now

Although Michigan was the epicenter, it has spread rapidly through New York, Texas, Illinois, Alaska, California, Colorado, Connecticut, Florida, Georgia, Louisiana, Massachusetts, New Jersey, North Carolina, Ohio, Pennsylvania, Tennessee, Virginia, and Wisconsin. States are reporting two to fourteen times the frequency. So much of the CDC has been gutted or hand-tied, states likely have better statistics.

Investigators still haven't pinpointed a single food source. Part of the difficulty is timing: with an incubation period stretching up to two weeks, people struggle to remember exactly what they ate by the time symptoms appear. The CDC has said there's no evidence yet that all reported cases trace back to one multistate outbreak — it looks more like several distinct regional clusters, possibly tied to different batches of produce. Basil, cilantro, spinach, and berries remain the most frequently implicated foods, consistent with past years. No recall has been issued as of this writing, and reporting has noted that recent cuts to CDC's workforce may be slowing the pace of source investigation.

With the funding cuts in many of the steps from harvest to table, be suspect. Be informed what the government says, but be skeptical if anyone minimizes this.


What the parasite actually looks like

Cyclospora oocysts are tiny — about 8 to 10 microns across, roughly a fifth the width of a human hair. That size is part of why routine stool tests miss them: labs have to specifically request modified acid-fast staining or PCR testing to detect the oocysts, and because shedding is intermittent, multiple stool samples are sometimes needed before a case is confirmed.


Peeling helps — but your knife and hands can undo it

Peeling is genuinely protective, since the parasite sits on the surface rather than inside the fruit. But peeling doesn't end the risk if your tools carry the contamination forward: the moment a knife touches unwashed skin, that contamination can transfer to the blade, and then to the flesh on the next cut — or to anything else that knife touches.


Hand hygiene: soap and water, not sanitizer

This is a genuine gap in most people's routine. Alcohol-based hand sanitizer does not reliably kill Cyclospora. Its tough oocyst wall resists alcohol — the same reason sanitizer is known to be ineffective against Cryptosporidium, a related parasite. Soap and water works because the mechanism is different: it's mechanical rather than chemical, physically scrubbing and rinsing the oocysts off your skin rather than trying to kill them in place.

Cyclospora is not only a US problem — it occurs throughout Latin America, South and Southeast Asia, Africa, and the Middle East. But the United States now sees seasonal outbreaks almost every summer, as both imported and domestically grown contaminated produce enters the food supply. The cyclosporiasis season runs roughly May through August, and most US infections trace back to fresh produce rather than contaminated drinking water. Does Dehydrating Help Against Cyclospora?

Short answer: No — dehydration does not reliably kill Cyclospora.
